Mark Moriarty, the inaugural winner of the international S.Pellegrino Young Chef Academy Competition will take on the role of juror for this year’s competition and has put together some Top Tips for young chefs looking to take part.
After winning the competition in 2015, Moriarty’s career skyrocketed. With the international recognition of the competition behind him, Mark brought his skills around the globe, working with top names in the food industry as well as a range of international brands. This year, Mark is looking forward to acting as a juror for the esteemed competition and has shares some top tips for young chefs looking to enter S.Pellegrino Young Chef Academy Competition 2022-23. Speaking about the competition, the 2015 winner, Mark Moriarty said, “Your dish is the most important part of a competition like this, and you need to be clear on its appeal and confident in its execution. Looking back on my time in the competition, I feel these are the key considerations that led me to success.”

Choose a delicious yet practical dish that is technically perfect and that you are confident in executing each element. 2. Bring your personality to the dish. It’s important that judges can tell what kind of chef you are and what you represent. 3. Make sure your dish has global relevance incorporating timely references, like sustainability for example. Your dish should be more than a series of complimentary ingredients, it’s a vehicle for telling a story and an opportunity to create a moment of theatre. 4. Cook something you are passionate about. Create a plate of food that has a message behind it.
5. Don't focus solely on seasonality, as it can often hinder you in a global competition that runs throughout the year. 6.
