Looking for a hint of veg with something indulgent? Spinach & Ricotta Tortelloni ticks all of those boxes! These fabulously tasty little pasta parcels are filled with fresh spinach and a creamy ricotta cheese.

Fancy some mushroom? The Non Quadrato Mushroom Ravioli is the one that is sure to satisfy those tastebuds – the ravioli pockets are filled with mushrooms and simply seasoned with salt & pepper.


Research has shown that many people purchase fresh pasta and later freeze what they do not use. To cook:

• Remove all packaging.

• Place pasta in a saucepan of boiling water, return to the boil and simmer for 4 minutes.

• Drain well and serve.

• Do not reheat once cooked.


Serving Suggestions:


Spinach and Ricotta - With basil, parmesan, olive oil

Serves: 2

Total time: 10 minutes


Ingredients:

1 bag Ottimo Spinach & Ricotta Filled Pasta


To serve:

• Parmesan, grated

• Olive oil

• Freshly ground black pepper

• Basil leaves, picked


Method:

Cook the Ottimo pasta for 4 minutes until cooked.

Drain and place back into the pan. Add a good handful of grated parmesan, a good drizzle of olive oil and a pinch of black pepper. Toss together and serve straight away with some torn basil leaves and extra grated parmesan


Spinach & Ricotta - With pesto, parmesan, black pepper

Serves: 2

Total time: 10 minutes


Ingredients:

1 bag Ottimo Spinach & Ricotta Filled Pasta


To serve:

• 100 grams basil pesto

• Handful of baby spinach leaves

• Freshly ground black pepper

• Basil leaves, picked

• Parmesan, grated


Method:

Cook the Ottimo pasta for 4 minutes until cooked.

Drain and place back into the pan. Add the basil pesto, baby spinach and a good pinch of black pepper and toss together to coat the pasta in sauce and wilt the spinach. Serve straight away with some torn basil leaves and grated parmesan.


Fantastico Four Cheese Ravioli - With fresh oregano, chilli flakes, black pepper, olive oil

Serves: 2

Total time: 10 minutes


Ingredients:

1 bag Ottimo 4 Cheese Filled Pasta


To serve:

• Picked oregano leaves

• Pinch chilli flakes

• Zest of ½ a lemon

• Freshly ground black pepper

• Parmesan, grated


Method:

Cook the Ottimo pasta for 4 minutes until cooked.

Drain and place back into the pan. Add the oregano leaves, chilli flakes, lemon zest, pepper and parmesan and toss together to coat. Serve immediately.


Fantastico Four Cheese Ravioli - With sun-dried tomato pesto

Serves: 2

Total time: 10 minutes


Ingredients:

1 bag Ottimo 4 Cheese Pasta


To serve:

• 100 grams sun-dried tomato or chilli pesto

• Zest of ½ a lemon

• Freshly ground black pepper

• Parmesan, grated

• Chilli flakes


Method:

Cook the Ottimo pasta for 4 minutes until cooked.

Drain and place back into the pan. Add the pesto, lemon zest and a good pinch of black pepper and toss together to coat the pasta in sauce. Serve straight away with some grated parmesan and a sprinkle of chilli flakes, if desired.


Non Quadrato Mushroom Ravioli - With gremolata

Serves: 2

Total time: 10 minutes


Ingredients:

1 bag Ottimo Non Quadrato Mushroom Ravioli


For the gremolata:

• ½ garlic clove

• Zest & juice of ½ a lemon

• Handful of parsley

• 50 ml extra-virgin olive oil

• Salt and freshly ground black pepper


Method:

Make the gremolata; finely chop the garlic, lemon zest and parsley and season with salt and pepper. Stir in the olive oil and lemon juice and set aside until needed.

Cook the Ottimo pasta for 4 minutes until cooked.

Drain and place back into the pan and toss with the gremolata.


Non Quadrato Mushroom Ravioli - With sage and brown butter sauce

Serves: 2

Total time: 10 minutes


Ingredients:

1 bag Ottimo Mushroom Filled Pasta


For the sauce:

• 100 grams butter

• small pack sage, leaves picked

• Juice of ½ a lemon

• Parmesan, grated


Method:

Cook the Ottimo pasta for 4 minutes until cooked.

Whilst the pasta cooks, melt the butter in a frying pan. Add the sage leaves, then cook on a low heat until the butter turns nutty and biscuity brown. Scoop out the sage leaves and set aside. Add half the lemon juice, and whisk well. Using a slotted spoon, transfer the Ottimo pasta into the frying pan. The aim here is to transfer some of the pasta water too, so don’t be too worried about draining the pasta properly. Using circular motions, swirl the pan together to emulsify the butter and water and add the remaining lemon juice, if needed. Top with the sage leaves and some parmesan to serve.
