James J. Fox, Ireland’s most prestigious cigar and whiskey merchant, is excited to announce a special single cask collaboration with West Cork Distillers: the West Cork 8 Year Old Single Malt.
Cask RC-436 showcases the meticulous aging process that defines this exceptional whiskey. For the first seven years, the spirit matured in ex-Bourbon and Sherry casks, which impart rich, complex flavours to the whiskey. The ex-Bourbon casks provide smooth vanilla undertones, while the Sherry cask adds sweet and nutty notes. To complete it's journey, the whiskey had been finished in a rye cask for one more year, adding a distinct spice and depth that sets this single malt apart.
Nose
Fresh and vibrant, with green apples, pear drops, icing sugar, honey, and digestive biscuits
Palate
Sweet and flavourful, with apple strudel, lemon drizzle, burnt toffee, charred oak, and a touch of cinnamon.
Finish
Dry oak, black forest fruits, cellar mustiness, and a long-lasting tingling dryness.
