Mash Direct have created a series of gorgeous, indulgent, fakeaway recipes to celebrate the launch of their new Skinny Fries.
From creamy Katsu Curry & Fries to a gorgeous Fakeaway Burger and Fries without the guilt, these are the ultimate treat!
Katsu Curry Chips Serves: 4 | Difficulty Level: Medium | Cook Time: 30 minutes Ingredients: • 2 packs of Mash Direct Skinny Fries • 2 packs of breaded chicken goujons • ½ red onion, finely sliced • 1 red pepper, finely sliced • ½ small bunch of coriander leaves For the Curry Sauce: • 400g tin of coconut milk • 50ml double cream • 1 tbsp butter • 1 white onion, peeled and finely diced • 2 large carrots, peeled and finely diced • 2 tsp crushed garlic • 2 tsp grated fresh ginger • 1tbsp curry powder • 2 tsp honey • 2 tsp yellow miso paste • 2 tsp light soy sauce • 1 vegetable stock cube Method: • Pre-heat your oven and place your Mash Direct Skinny Fries and breaded chicken goujons on a baking tray and cook as per pack instructions. • For the Curry Sauce: On a medium heat, melt your butter and gently fry your diced onion and carrot till softened, around 5 minutes. • Add your garlic, and ginger and cook for a further 1-2 minutes. Add your coconut milk and cream and bring to the boil, then reduce to a simmer • Add in your honey, soy sauce, curry powder, miso and stock cube and stir in till the stock cube is dissolved.
• Leave the sauce to simmer for around 10 – 12 minutes. Blitz your sauce in a food processor and pass it through a sieve to achieve a smooth consistency. • Portion up your Skinny Fries onto plates, cut your chicken goujons into slices and arrange on top of your Skinny Fries. Pour over your desired amount of sauce and top with your sliced onion, red pepper, and coriander leaf.
Takeaway Style Burger and Fries Serves: 4 | Difficulty Level: Easy | Cook Time: 25 - 30 minutes Ingredients: • 2 packs of Mash Direct Skinny Fries • 500g beef mince • 1 small white onion • 1 tsp Worcestershire sauce • Pinch of salt & pepper • Vegetable oil • 4 cheese slices • Pickles • Tomato • Red onion • Baby gem lettuce • 4 brioche burger buns • Optional: 1 pack of Mash Direct Beer Battered Onion Rings to serve. Burger sauce: • 20g Pickle/burger relish • 70g Mayonnaise • 30g Ketchup • 10g American mustard This makes enough to use again. Method: • Preheat oven and cook Mash Direct Skinny Fries as per cooking instructions on pack. • For the burger sauce: mix mayonnaise, ketchup, American mustard, and pickle relish in a bowl. Taste the sauce and season according to personal preference and leave in fridge till assembly. Alternatively, you can also buy burger sauce from most supermarkets. • For the burgers: peel and grate the onion and mix with the beef mince, Worcestershire sauce, salt and pepper until well combined. • Shape the burger mix into 4 small burger patties and flatten down till quite thin – about 10cm in diameter and 0.5 cm in thickness. • In a large frying pan heat 2 tbsp vegetable oil over a medium heat, if your pan is small cook the burgers in two batches. Add patties to the pan and brown on one side for around two minutes. • Turn your burgers and cover the top of the frying pan with a large lid or a metal bowl, covering the entirety of the pan. Cook the Burgers for a further 5 minutes. • Remove your lid and top each burger with a slice of cheese. Cover the pan again and cook for a further 2 minutes. Remove burgers from the pan and leave to rest on a chopping board for 2 minutes. The burgers should be fully cooked through with no pink. • While the burgers are resting, slice your tomato, red onion, and pickle. You can half your brioche buns and toast under the grill if desired. • Assembling the burgers: Place your burger on the base of the sliced brioche bun and top with tomatoes, pickles, onions, baby gem lettuce and burger sauce. Place the top of the brioche bun on top, you can secure with a skewer or kebab stick. You can also add Mash Direct Beer Battered Onion Rings on top. • Lightly season your Skinny Fries with salt and serve with your favourite condiments.
