(Vegetarian)

Makes 8-10 pancakes

Pancakes:

  • 100g plain flour

  • 2 tbsp. cocoa powder, sifted

  • ½ tsp baking powder

  • ½ tsp salt

  • 150ml milk

  • 2 tbsp. unsalted butter, melted

  • 1 large egg, lightly beaten

  • 2 tsp caster sugar

  • Sunflower oil, for frying

Chocolate sauce:

  • 100ml milk

  • 150g of Butlers 40% Milk Chocolate, roughly chopped

Method:

  • Whisk together flour, cocoa powder, baking powder and salt together. Add the milk, melted butter, egg and sugar, then whisk until the batter is smooth.

  • Place a large frying pan over medium-high heat, reduce heat to medium and drizzle with a little oil.

  • For each pancake, place a ladleful of batter in the pan – you can cook a few at a time, depending on the size of your frying pan. Cook until bubbles appear on the surface, then flip over with a spatula and continue to cook for 1-2 minutes.

  • Keep pancakes warm in a low-temperature oven while you cook the remaining pancakes.

  • To make the sauce, place the milk and chocolate in a small saucepan over medium heat, stirring occasionally, until the sauce is smooth and shiny.

  • Serve the pancakes with the warm chocolate sauce.

Slán go fóill.
