(Vegetarian)
Makes 8-10 pancakes
Pancakes:
100g plain flour
2 tbsp. cocoa powder, sifted
½ tsp baking powder
½ tsp salt
150ml milk
2 tbsp. unsalted butter, melted
1 large egg, lightly beaten
2 tsp caster sugar
Sunflower oil, for frying
Chocolate sauce:
100ml milk
150g of Butlers 40% Milk Chocolate, roughly chopped
Method:
Whisk together flour, cocoa powder, baking powder and salt together. Add the milk, melted butter, egg and sugar, then whisk until the batter is smooth.
Place a large frying pan over medium-high heat, reduce heat to medium and drizzle with a little oil.
For each pancake, place a ladleful of batter in the pan – you can cook a few at a time, depending on the size of your frying pan. Cook until bubbles appear on the surface, then flip over with a spatula and continue to cook for 1-2 minutes.
Keep pancakes warm in a low-temperature oven while you cook the remaining pancakes.
To make the sauce, place the milk and chocolate in a small saucepan over medium heat, stirring occasionally, until the sauce is smooth and shiny.
Serve the pancakes with the warm chocolate sauce.
