The Michelin Guide for Great Britain and Ireland reassesses each starred restaurant annually, ensuring it meets the exceptional standards required to maintain this prestigious honour.
The Michelin Guide describes Aniar’s offering as “micro-seasonal menus finalised based on the day's locally sourced produce, showcased in pure, delicate, and well-balanced dishes”. It also highlights how “the cooking cleverly blends traditional and modern techniques, while contrasts in texture, temperature, and acidity add depth to each dish”.

The team in Aniar, led on the floor by new manager, Alicia Polo has continued to push the boundaries of Irish cuisine, championing local and seasonal ingredients sourced from Galway’s rich landscape. The restaurant’s dedication to innovation, craftsmanship, and authentic Irish food experiences has secured its place among the world’s finest dining establishments.

Chef Patron of Aniar, JP McMahon, says, “I'm delighted to retain our Michelin star at Aniar for another year. To maintain a star for thirteen years is no mean feat. It's a daily dedication and a team effort from our front and back of house. Our mission to showcase Irish food through its wild ingredients, from seaweed to game, means we offer a unique experience in relation to Irish cuisine. The achievement of all these years is great for Galway as well as for Ireland.”
The restaurant’s 24-course tasting menu draws on the terroir of the west coast of Ireland. Guests can enjoy wine and drinks pairings with the tasting menu or select a glass from a carefully curated selection of wines, chosen with the expertise of in-house Sommelier Michael Crowley. Aniar offers both a Classic Drinks Pairing and a Prestige Wine Pairing, thoughtfully designed by the team to complement the seasonal menu.
In keeping with Aniar’s source local ethos, guests can also opt for a unique Irish Drinks offering featuring Irish cider, beer, kefir, and wine - all produced in Ireland. For a non-alcoholic option, Aniar offers a Juice Pairing featuring juices made from ingredients such as apple, kelp, pine, cherry, and woodruff all carefully prepared by assistant Head Chef, Claudio Schiano di Cola.
